Words of the Day: Bechamel and Roux

Bechamel is a creamy white sauce that is made of a roux (butter and flour) and milk. It’s a basic technique, but it is the base of many delicious recipes and sauces like creamy soups, scalloped potatoes, gravy, pie filings, macaroni and cheese, etc. The list is endless! To make a bechamel, you need to slowly whisk milk into the roux on low heat so that it doesn’t burn or get clumpy. It sounds simple enough, but it an be difficult to master. Once you master the technique it can take you on an endless journey of sauces, casseroles, and other tasty recipes! Happy cooking!
