Word of the Day: Dredging

A cooking technique whereby you coat a wet ingredient (e.g. chicken breast, veal, etc.) by rolling it around in a dry ingredient (e.g. flour, panko crumbs, bread crumbs, etc.).

Hint: it’s best to have an even coating on your wet ingredient, so smack off that excess coating to avoid eating clumps of powder (or batter).
