Tom Yum Soup

It’s cold outside. Very cold! But nothing a tom yum soup won’t cure. This is a Thai soup with a good balance of sweet, spicy, sour and tangy. It’s made with ingredients like keffir lime leaves, lemongrass and galangal to name a few.

Although it is normally an aromatic soup on its own with some vegetables and fruits like tomatoes, celery, beansprouts and pineapple, sometimes I like to add rice vermicelli noodles to make it more filling. It can also be prepared with different types of meats, like beef, chicken or shrimp. It’s fragrant, it’s a good way to warm up and it’s definitely hot – temperature-wise and on the spice meter! At times, it’s a good way to work up a sweat without going to the gym.:)
