Honolulu Shortbread Cookies

There are so many places that I have yet to explore. It’s a never ending mission to travel around the world to see the sites, hear the different languages and music, and taste and smell the food. However, when it’s not possible, a good alternative in getting a glimpse of a country is through it’s food. I couple of friends of mine ended up in Hawaii and fortunately for me, they brought back goodies.

Cookies

Hawaii is known for pineapples, coconuts, and perfect sunshine all year round. It’s also known for macadamia nuts. I remember several years ago, a colleague of mine came back with mini packages of those buttery, rich nuts for everyone. Alone, they are delicious, but when made into cookies – even more so!

The shortbread cookies they brought back made by Honolulu Cookie Company were to die for. Each and everyone single one – chocolate or non-chocolate dipped – was delicious. They came in a variety of flavours – chocolate chip macadamia, white chocolate coconut, pineapple macadamia, butter macadamia…The cute part is they all came in the fun shape of a pineapple. Being individually wrapped made it easier to stop myself from engulfing them all in one sitting or taking one as a snack (though just one proved to be very difficult).

I was actually planning to go to Hawaii last year, but due to some political changes I decided not to. Who knows when I’ll end up in Hawaii, but when I do I know I will be purchasing a bunch of these cookies!
